Well, I finally got the grill out, cleaned up, and re-seasoned, and made something I found on YouTube. I've been watching Kent Rollins' channel (https://www.youtube.com/watch?v=OEV0XhACj-A) and this one is his grilled stuffed chicken thighs. (To be honest, this guy is an amazing cook, with a rather unique history of being an actual Chuckwagon cook for working cowboy ranches for over 25 years, and has competed on Chopped and even beat Bobby Flay!) I made this one pretty much as he instructs. The result - OH MY GOD!
This is a boiled chicken breast (not completely cooked), then stuffed with cream cheese, dry mustard, brown sugar, and garlic. Then it's all wrapped up into a nice tight little ball with bacon, and glazed with a mixture of Crown Royal Peach, Honey, and minced jalapenos. (Ok...I slivered mine). This was tossed on the grill with indirect heat, with mesquite hardwood and a nice slab of applewood.
If you do plan on trying this I seriously recommend a WIDE drip pan underneath this as it cooks or you're going to have one helluva mess to clean up afterwards.
