It dries nicely. And good for mint tea, mint julips, mojitos, mint soup, lamb and game meats, Mediterranean & Moroccan dishes, salads, bruschetta, and lots more.

We tilled out a spot by the garage for an extra garden - which had a lot of weeds, plus mint...
Separated it with plastic borders, rocks, you name it....
RE-planted it with some rhubarb, onions, cucumbers and some kind of squash...(which is going rather nicely)

heh. make minty sun tea. take one gallon milk jug, put one cup of sugar in it, pluck, and bruise several stems of mint, and shove those as well as five black tea bags into the bottle, fill with tap water, and GENTLY shake it. [too vigorous, and you can burst the tea bags, but gentle sloshing shouldn't.] and place in the warm sun for at least 4 hours. I often go through a gallon of tea every 5ish days, on my own. that'll easily overwhelm your mint.
