So apologies in advance this makes alot
Meat prep
15 lbs ground beef
1.5 quarts diced (i like strips) bell pepper and onion each
3 tablespoon each of the following: garlic powder, mexican oregano, sweet smoked paprika, onion powder, light chilli powder
2 tablespoon each cayenne and crushed red pepper
4 tablespoons ground cumin
Mix all above and brown meat draining most but not all fat.
Stock
1 gallon water
5.5 oz beef stock
1 10 can says weight is 6lbs 6 oz diced tomatoes in juice
30 oz tomatoe paste
1 Tablespoon each of the above spices
Bring to boil and then turn down to a simmer before adding meat mixture. Simmer for an additional 20-30 min
At this point you can simmer till desired thickness or cheat and make a slurry out of 2 cups cornstarch and enough water till its smooth like
milk and stir constantly as you add it to thicken
You can also add other meats or beans as desired to this recipe and make it your own
