An homage of sorts to a lovely bit of bar food I had in San Francisco last year.
We start with making crispy quinoa; because I didn't want to make a full recipe, I just cooked 2 oz. quinoa in 4 oz water (bring the water to the boil, add the quinoa, stir; drop heat to low and cover, leave it for up to 20 minutes to absorb the water), then spread the cooked quinoa out on a foil-lined baking sheet and put it under the broiler for 7 minutes (check it frequently, move it around with a spatula and keep an eye on it so it won't burn). You won't use much of it for this recipe, but I have plans.
You also need six hard-boiled eggs. Make them the way you want. After they're cold and shelled, split them in half and take out the yolks. Mash the yolks with a fork.
Garlic mayo:
2 cloves garlic
1/4 tsp kosher salt
1/2 cup mayo
2 tbsp olive oil
1 tbsp lemon juice
Mash the garlic with the salt to make a paste; combine with the other ingredients.
1. Mix the yolks with about 2-3 tablespoons of the garlic mayo until fairly smooth.
2. Sprinkle some of the crispy quinoa into the well in each egg white.
3. Spoon or pipe in the yolk mixture.
4. Top with more crispy quinoa and bacon pieces.
