
This years 4th of July dinner was comprised of whatever I could find at the grocery store. Stock is still in limited supply thanks to everything that's still going on. So here's what I was able to create with what I was able to find.
What You'll Need:
-white bread kaiser rolls
-skirt steak/flat steak of any kind (I was lucky enough to find the last pack of tri tip. I know not everyone is going to be that lucky, so just use whatever type of "carne asada" style beef you can find.)
-1 14.5 oz can of tomatoes diced with green bell pepper and onion
-1 4 oz can of sliced mushrooms
-sweet bay ray's BBQ sauce (any BBQ sauce will do but I always go with sweet baby ray's)
-lots of mozzarella cheese
-butter
-chunky garlic paste
-desired seasonings (I used salt, pepper, garlic salt, seasoned salt, and beef seasoning)
-desired condiments (mustard, mayo, etc.)
-BREAD PREPARATION-
Step 1:
Preheat oven to 375 degrees.
Step 2:
Slice each roll in half and place top-side down on a baking sheet.
Step 3:
Top with a thin layer of butter on each roll followed by a thin layer of the garlic paste. Next, top with a heavy amount of grated mozzarella cheese for each half roll.
Step 4:
Place in the oven for 5 to 8 minutes. Just enough to melt the cheese. You don't want the rolls too crispy.
-SAUCE PREPARATION-
Step 1:
Take a large skillet over high heat and start by adding the mushrooms and 3 tablespoons of butter, no need to drain. Cook for a couple minutes as mushrooms take a little longer to cook then everything else.
Step 2:
Add the can of tomatoes, 3 heavy squirts of BBQ sauce, and all of your desired seasonings.
Step 3:
Stir and return to boil. Once boiling, cover and place on low heat to let simmer while you're cooking the meat. Remove from heat after meat prep is finished making sure to stir occasionally.
-MEAT PREPARATION-
Step 1:
In a separate skillet, add a pallet of butter and pan fry the entire slice of meat over Med-high, topping with salt, pepper, and beef seasoning if you got it. Skirt steak doesn't take very long to cook, 30 seconds to a minute at most on each side. You want it just a bit brown. Cooking for too long will make the meat tough. You want it juicy and tender.
Step 2:
Repeat this process with every steak making sure to replace a butter pallet with every piece.
Step 3:
When every piece has been cooked, place on a cutting board and cut into bite sized strips. It's much easier to cook first, cut second.
-ASSEMBLY-
Half roll down. Top with some steak strips, then the sauce, plus desired condiments, then top roll and enjoy. Hope everyone had an alright 4th.
