800g of mascarpone cheese
250g of gingernuts (if you want you could swap with gingerbread)
100g of butter
4 teaspoons of instant coffee
100g of icing sugar
Bash the gingernuts into small crumbs while melting the butter, then mix the butter with gingernuts. Lay it on the thing you are doing your cheesecake in and chill it. With the cheese sieve the icing sugar in to it then add water to form a paste then pour it into the cheese and sugar mix, whisk it all together then and pour it over gingernuts and butter mix and chill until firm and then eat it with friends and family.
