Because why the hell not. I made this for dinner and leftovers today.
What You Need:
14 oz smoked kielbasa or other type of sausage
16 oz can baked beans
8.5 oz box corn muffin mix
1/2 cup egg substitute or 2 eggs, beaten severely but with love
14.75 oz can creamed corn
6 oz sliced green onion
1 cup grated Parmesan
1 tsp dried parsley
1 tsp dried red pepper flakes
smoked paprika
What You Do:
1. Preheat oven to 400 degrees Fahrenheit.
2. Slice the kielbasa into 1/4-inch rounds; working in batches, brown the meat in a skillet on medium-high heat and drain on paper towels. No oil; like bacon, it makes its own grease. Arrange in a single layer in the bottom of a 13x9-inch glass baking dish or similar.
3. Top the meat with the beans, spreading it out in a layer.
4. Combine the next seven ingredients and spread over the meat and beans layer. Sprinkle with the paprika and maybe a little more dried parsley.
5. Bake at 400F for 30 minutes, or until the muffin topping is golden brown and the beans are bubbling.
Verdict: Very tasty; the dried pepper flakes and the smokiness of the kielbasa offset the sweetness of the beans and the muffin mix. I would recommend that you use more than 14 ounces of sausage, though - I know I will when I do this again.
