Evelyn is pretty, but I had in mind something like more oriented to names of desserts, flowers or even gemstones.

Kind of a dumb suggestion, but how about "Pinku" (Japanese for pink). Not many characters are entirely one color, let alone entirely pink, so you might as well embrace it!
