Not sure how true it is, but I heard from a poodle owner that during these hunts, the bobs near the butt were meant to protect vital organs, because wild predators will try to bite there for killing blows. And all the fluff acts as padding that takes the brunt of the bite. Also keeps those vitals warm in the cold.
It sounds interesting, but it seems like the predator would just have to bite next to the bob, and still inflict a lot of damage.

Well, it would clearly be meant as something that the predator would inadvertantly have an easier time grasping that wouldn't hurt the dog as much, and of course the dog being intelligent, poodles considered very very bright by canine standards, would likely be fighting dirty to get loose.
