Its actually called "Monica's He-Man Chili" on AllRecipes.com, but I've put in a few tweaks and its very tasty :D Recipe by Monica M., thanks Monica :P
1/2 pound bacon (didn't add, but I would have to say you really only need a few strips to give it that extra smoky flavor)
1 pound kielbasa sausage
1 pound ground beef (I used 1 pound ground turkey burger, didnt taste any different and its a lower fat alternative)
1 large onion, chopped
1 shallot, chopped (my extra :P)
1 green bell pepper (didnt add, but its good for color)
1 tablespoon chopped jalapeno pepper- I used two roasted jalapenos, but for more of an oomph I'd have to recommend chipotles in adobo- and DONT skimp on the sauce in the can, it should get right in there as well)
1 cup merlot wine (I used maybe a half cup of pinot grigio- a white wine- it gave this more of a flavor, but you can use either)
2 (28 oz.) cans whole peeled tomatoes, mashed, liquid reserved (I skipped this step, and put in a big can of pureed tomatoes instead)
2 tablespoons chili powder
1 can kidney beans, drained
1 can cannellini beans, also drained
salt and pepper, to taste
1.) Now- with a big sauce pan- and over medium high heat, cook the bacon until evenly brown and crisp, set aside- and do the same for the keilbasa and the ground beef, reserving the bacon grease to cook all of it and its browned. Set all of that aside, then saute the onion, shallot and green pepper in the meaty juices until tender.
2.) Then- mix all of the meat back into the pot with the jalapeno pepper; pour in the wine and tomatoes, and season with salt, pepper and chili powder. Cook 20 minutes, stirring often until the sauce boils down and it gets a chance to thicken. Mix in beans, and continue to cook for another 25 minutes, and serve with shredded cheese (which is on top, pictured), or chives, or even sour cream if you want to cool it down.
In fact I would go so far as to say the turkey burger cooked a lot quicker, but have it on medium high for 15-20 minutes to be safe.
