Chicken Alfredo Lasagna
Alfredo Sauce (see below)
9 lasagna noodles, cooked
Ricotta cheese
Cottage cheese
Shredded Mozzerella cheese
Shredded Parmesan cheese
Cooked chicken*, diced
*when I cooked mine, I used chicken tenderloins that I salted and peppered, and cooked on a George Foreman grill
To make your own Alfredo sauce (believe me, this tastes SO much better than anything store bought ever could) you will need:
1 stick sweet butter
2 garlic cloves, minced
2 cups heavy cream
1/4 tsp white pepper
1/2 cup parmesan cheese (grated or shredded works, original recipe I used called for grated but I used the shredded)
3/4 cup mozzarella cheese
In a sauce pan melt the butter on medium/low heat. Then add the garlic, cream, and white pepper and bring to a simmer. Stir often. Add the Parmesan as simmer for 8-10 minutes, or until sauce as thickened and is smooth. Then add your mozzarella and stir frequently for about 3-5 minutes more. Remove from heat and add chicken.
Now in your lasagna dish, lay down three of the noodles, add a layer of Ricotta and Cottage cheese, a thinnish layer of mozzarella, then a layer of the alfredo sauce and chicken mix. Repeat until all but the mozzerella is depleted. Top with a layer of mozzarella and Parmesan cheese.
Cook in oven at 350 F for 30 minutes.
