Yeah, that's called "Jailbreak". It's this program that hacks the iPod touch and makes it so ya can change EVERYTHING in it! But I didn't do it to mine, I'm not sure about it.
And to download YouTube videos, all you gotta do is go to this web site, and click "Video Converter" then fallow the steps! And there ya go! ^-^
