I used to use the watercolors all the time, but I haven't used the inks. I loved how bright the colors were, and a little bit of the color goes a long way!
I mostly used them as solid colors on inked artwork, such as hand-colored prints, where I wanted bright transparent color. Otherwise, I would use them like any other watercolors, like washing in a background. (If I wanted a solid smooth large area -- well, I never quite mastered that! I ended up with streaks and uneven-looking areas.)
My husband used them in an airbrush and said that worked great for background washes, but I never did that myself.
I'm not sure what the differences would be between the inks and watercolors. It's possible the inks would not be water-soluble after drying; the watercolors are definitely water-soluble for years after drying.
