Here's a platter of sugar cookies I baked for my family's annual Christmas dinner last year. The base is your basic sugar cookie, but I've decorated them with various ingredients and designs, using decorator's icing, piping gel, rolled-out fondant, and sparkling sugar. I like how the Christmas trees and snowflakes came out the most. :)
HERE'S WHATCHA NEED:
1 cup (8 ounces) unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 teaspoons baking powder
3 cups all-purpose flour
HERE'S WHATCHA GOTTA DO:
1. Preheat the oven to 400 degrees Fahrenheit.
2. In the bowl of a stand mixer, cream together the butter and sugar, then beat in the egg and vanilla, making sure to stop the mixing at least once to scrape down the sides of the bowl with a spatula.
3. In another bowl, sift together the baking powder and flour. Add the flour mix to the creamed butter and sugar, one cup at a time, mixing well after each addition. The dough will get very stiff; you may have the to blend in the last addition of flour by hand. Do not chill the dough, use at room temperature!
4. Roll out the dough to a 3/8 inch thickness and cut out the shapes you want with cookie cutters dusted with a little bit of flour. This is to prevent the dough from sticking to the cookie cutter. Line cookie sheets with parchment paper and place cookies on sheets at least one inch apart from each other. Bake 8 to 10 minutes or until cookies are lightly browned. Remove cookies to a cooling grid to cool completely.
