Of all places, I found the catologue of arms & armour of the wallace collection in our university library and now I understand mail sabatons.
It seems that Italian armour had chain mail sabatons since there, knights primarily fought ahorse and their stirrups formed closed cups at the end, so as to protect the foot. Thus allowing lighter armour with no loss of protection. :-0
