I might call this Circus Pork, cause it's so colorful, and spangley. I took a pair of pork tenderloins [I can't stress how good these lil buggers are, and affordable too!] I stabbed them and inserted split garlic cloves, at least 20 shards when in, and I laid them on a bed of carrots which I peeled into shavings, go nuts with your veggie peeler, it's fun! seasoned the roasts with salt, pepper, thyme and sage, and covered with three colored strips of bell pepper, and onions over that, the secret ingredient in this dish? the defatted pan drippings from the ham i had the other day, drizzle that all over, then BAKE that sucker, till it reads a bout 140 on a thermometer, should take about 45mins or so, at 375.
