This is a great recipe that has been in the family for a long time it isn't challah or brioche, but it is close,
very rich, perfect for paninis sandwiches ext. It is very easy to under-bake this recipe, you may have to cover the top with foil if it browns too quickly
6-6 1/2 cups flour
2 cups warm water
2 eggs beaten
1tbsp salt
2 1/4 oz packages of active dry yeast
1/4 cup melted butter (1/2 stick)
1/2 cup of sugar
yields 2 large loaves
1/2 small batch
3-3 ½ flour
1 cup water
1 egg beaten
1/2 tbsp salt
1 1/4oz package of yeast
2tbsp melted butter
1/4cup sugar
yields 1 loaf
combine yeast water in a large stand mixer (see note) and sugar let dissolve (approximately 8 minutes)
Stir in eggs and melted butter add flour and mix with dough hook on low speed until smooth an elastic (about 8 minutes) the dough is very soft and slightly tacky if it is too tacky you can always kneed in more flour by hand.
Place in an oiled bowl cover and let rise until doubled (approximately 1 hour) punch down and fold over and let double a second time (approximately 50 minutes) Divide dough into 2 portions. Roll each into a rectangle and roll into a loaf pinching edges to seal....
place in greased loaf pans cover and let rise until doubled (about another hour)
(note if you do not have a stand mixer you can do it by hand combine flour and salt in a large bowl and make a well, our in yeast mixture, incorporating more and more flour as you stir. A forewarning...you are in for quite a workout XD)
bake 30-35 minutes at 350 and the bottom of the loaf sounds hollow when tapped (as I mentioned before do not under-bake this recipe is tricky at best and can be hard to gauge at times if you are worried turn the oven temp down and bake an extra 5 minutes)
