By the simple fact that you can't just kill a werewolf in their human form at their weakest, but at their normal form, without using too many destructive attacks at the body or at least the skull. Which is a feat in itself since werewolf regeneration is infamous.
But those that manage... Proudly display their prize.
And the more crafty ones even use it in decoration!
