Ravishing ravioli from the kitchens of peltsilversmith

Well, I was craving ravioli, so I made some from scratch, and I decided to share the recipe because why not XD
Pasta:
1 1/3 cup flour
2 eggs
2 tablespoons of water
1 teaspoon salt
1 tablespoon E.V.O. Oil
knead together until a stiff dough is formed, more flour may be needed depending on the humidity of your house.
Filling:
(note, there are no set measurements for the filling because I don't use them, just do what you feel is right, it's art, treat it as such!)
Portuguese slab bacon
goats cheese
bell pepper
portobello mushroom
red onion
garlic
(REAL)mozzarella
olive oil
red wine vinegar
mince all filling ingredients and set the cheeses aside until after all other filling ingredients are cooked
When mincing your slab bacon save the rind (skin), you will fry it latter to make crackling for the garnish
Pre-cook your filling and mix well with the cheeses, then set aside. roll the dough thinly (4-6mm) and cut into 2in strips, place filling on one side of the dough about every 2-2.5 inchs or so, make sure to only use a small amount of filling or they will burst (about a nickel to quarter sized amount), fold over the other side of the dough and seal along top edge and sides, cut ravioli evenly and either seal with the tines of a fork or with your fingers, and if you wish to you can fold the bottom corners of the ravioli and pinch them together (I have both styles pictured) cook in water that is at a rolling boil for 5-8 min, or until pasta is tender
finish by frying in butter with the pre-fried rind of the slab bacon, a small amount of minced tomato, onion, and broccoli for color.
now I know there is going to be that one guy that asks me "Why is there no Herbs in this?" and the answer is I don't have any right now. and if you ask me if there is salt or pepper I will throw a hissy fit. of course there is, use common sense
