....This recipe is so easy, a caveman can do it - and this happens to be keto/paleo friendly :B
1 avocado
2 eggs
salt + pepper
BACON bits (or whatever you want to top it with)
1 slice lemon (optional, but I will come to why I used in a moment)
1 spoon plus 1 sharp knife
All you have to do is: slice the avocado in half, and as for the pit - just give the avo seed a hard tap with the sharp end of the knife so it sticks in there, and give it a gentle twist. Then you can just either grow the seed or compost it.
I would recommend scooping out just a bit of the avocado divot, so that the egg has more room to cook.
As for the lemon, squeeze that on the avocado so that it still stays green while cooking (and the lemon flavor will cook out anyways)
Sprinkle on those BACON bits, cover a cookie sheet with tin foil for easy clean up (in my case it was the oven pan included with my toaster oven) and let cook for 10 minutes at 450F !
As for the leftover avo you can use that as a mini guacamole or spread on toast, take your pick...
And please note, you do NOT have to put meat on this at all - for a vegan option, use sauteed mushrooms with crumbled tofu (preferably cooked with olive/sesame oil), or eggplants, red peppers, whatever suits you!
AND skipping breakfast entirely you can use your favorite curried crab with mayo as a filling, italian style (with precooked italian sausage, sauce, etc), greek, etc etc etc for lunch /dinner!!
