What to do with excess Pulled Pork? We were tired of Pulled Pork Buns, Pulled Pork on the fork, Pulled Pork croissants because damn that was a huge piece of pork and we had a lot left over. For the moment the remainder Pulled Pork was packed into zip bags and frozen. Time moves on and a few months later we had a lot of leftover mashed potato, leftover spinach and rediscovered the frozen Pulled Pork.
Mrduhast and I didn’t feel like having the Pulled Pork on its own with sides. So we mixed the leftovers and made Potato Top Pulled Pork Pies.
Potato Top Pulled Pork Pie
I used two dishes and had enough to serve 4-6
Ingredients
Pulled Pork (defrosted leftovers)
I used 2 sandwich bags of pulled pork see here for BBQ Pulled Pork recipe https://www.furaffinity.net/view/33644290/
½ cup Mixed Vegetables (peas, carrot & corn pre cooked)
A little bit of leftover cooked chopped spinach (defrosted)
BBQ sauce
Tomato sauce
Salt and Pepper to taste.
1 cup of gravy (instant is fine)
Mashed Potato (fresh instant or leftovers)
2 boiled eggs (mashed)
About 1 cup Parmesan Cheese
Heat proof dish or Pyrex
Oil spray or butter to grease the dish
Method
1. Combine Pulled Pork, Mixed Veg, Spinach, BBQ sauce, Tomato sauce, Salt and Pepper to taste and gravy. (If you want add a hit of chilli sauce for that extra bite) You want the consistency to be moist but not dripping wet.
2. Spray or grease a heat proof dish with oil or butter.
3. Load in enough of the Pulled Pork mixture the about ¾ up the side of the dish. Smooth it out.
4. Sprinkle on some mashed egg
5. Add a sprinkle of Parmesan cheese
6. Top with the mashed potato (I like to sweep the outer edge up a bit and leave a shallow well in the middle
7. Sprinkle with more Parmesan cheese
8. Bake at 180°C (350°F) for 30 minutes or until the centre is hot and the top is a nicely crisped to a golden brown.
Notes and Variations:
Ovens vary considerably so adjust your times to suit your oven.
If you are cooking in a small toaster oven you may need to cover the top with a layer of non-stick paper and aluminum foil for the first 15 minutes so it doesn't burn the top and possibly cook it a bit longer.
Basically you can make any cooked leftovers into a potato top pie given that you have enough mashed potato available. I chose not to make a traditional crust because I’m not a huge pastry fan.
I’ve done similar dishes with roast meats, roast vegetables, tinned tuna or other fish mixed with any pre cooked vegetables.
Any melting cheese works well Tasty, Parmesan and Mozzarella etc.
Sprinkle the top with cooked bacon bits and cooked onion, layer it up with whatever you have available.
Change the mashed potato out for mashed sweet potato, mashed pumpkin or even a mixture of all three.
