Terrific tacos with a scintillating salmon twist from the kitchens of wambamsam

Tequila Flavored Seafood Tacos. made these for dinner and they were the best fish tacos I ever had, and a strong candidate for best taco of all.
this will make 5 tacos.
To make this you will need
12 ounces of salmon fillets fresh or frozen
1 head of iceberg lettuce
4 ounces of tequila
a skillet preferably cast iron
sour cream
salsa, either homemade or store bought
Guacamole, again, either homemade or store bought
1 tomato, diced
1 can of enchilada sauce
1 teaspoon olive oil
spices
adobo 1 tsp.
white pepper 1/4
cayenne pepper 1/2 tsp.
lemon pepper 1 tbsp.
defrost the salmon fillets in the refrigerator or sink. cut into large cubes
roll the salmon in the spices. be sure to distribute the spices evenly between all the pieces
heat your frying pan and add the salmon.
then the salmon is about halfway done, pour the tequila. put the lid on the pan.
when salmon is cooked on all sides, move to back burner
take 5 tortillas. roast directly on the burner until charred lightly.
add salmon, enchilada sauce tomatoes sour cream guacamole and lettuce.
chow down.
warning contains seafood dairy products and alcohol. the alcohol will cook out .
