Beef and Broccoli Burgers
This deviation is a recipe for beef and broccoli burgers. I’ve always been a fan of clashing Asian and Western food together and this is one of those recipes I’ll be sharing.
Place 2 pounds of ground beef into a large mixing bowl and marinate it with a teaspoon of salt and pepper, 1/4 teaspoon of baking soda, 3 cloves of minced garlic, a teaspoon of minced ginger and two tablespoons of the following ingredients: soy sauce, sesame oil, oyster sauce, sugar, dry sherry and corn starch. Kneed the ingredients into the meat until well mixed and place it in the fridge for an hour.
While your meat is marinating, you can prep your broccoli. Chop off the crowns and toss them into a cup of boiling water for at least 1 minute. If you’re using a pan or skillet to make the burgers, I recommend using it to boil the broccoli and also using it to sear the patties. Just make sure the pan is dry before frying. If you’re using a countertop grill, then just use a medium sauce pan to boil. Once the broccoli is green and vibrant, strain them into a colander.
Now that your meat is marinated, take it out of the fridge and divide it into 8 round pieces and flatten them into patties. Before grilling or searing, make sure your pan or grill is at the highest heat possible and a good way to check is by dropping a little water into it. If it evaporates immediately then it’s ready to use. Place the patties on the hot surface without bothering them for 3-4 minutes on each side. After the minutes are up, place the patties on a separate plate and check if they’re ready with an instant read meat thermometer.
For Rare: You're looking for 120-130 degrees, for medium rare you're looking for 130-140 degrees and for well done you're looking for 140 and over.
When the burgers are done to your liking, place the hamburger buns on the hot surface until brown and toasted. About 45 seconds. Place the patty on the bun, place the broccoli crowns on top, drizzle on sesame oil before placing the top bun and enjoy.
