....Well, might as well do something with the leftover turkey, so here you go!
1 1/2 tablespoons olive oil
3 carrots, peeled and chopped
1 small onion, chopped
2 cloves garlic, peeled and chopped
4 ribs celery, washed and chopped
1 tsp whole coriander seeds, crushed
1/2 tsp dried oregano
1/2 tsp dried rosemary
1/2 tsp salt (you honestly wont need all that much, what with the natural salts from the celery, plus whatever was put on the turkey when it was cooked)
grind or two of peppercorns
1 cup rice (this might have been a bit too much, but nothing more broth can't fix)
1 box low salt chicken broth or bone broth
1 to 1 1/2 cups of leftover turkey, chopped
Its a one pot meal - all you need is a large saucepan...
Peel and chop the carrots, chop the celery, onion and garlic...
Coat the saucepan (or soup pan, wtf its called), and turn to med high - then once its hot, toss in the coriander seeds and then the onions, garlic and salt, let them sweat down and get translucent
Then add in the carrots and celery, along with the rest of the herbs...
Then add in the chopped turkey - if it has the skin still on, even better, since fat = flavor!
Saute for a few more minutes and then add in the box of chicken broth...then the rice, and then turn the heat down to low (but not simmer) and add in the rice and cover the pan with a lid, let it cook for a good half hour to 45 minutes until the rice plumps up - if you see that it needs more stock, dont be afraid to add it in! (Id say one half of a box would be more than enough)
Season to taste, but the flavors will stand right up and say "gobble gobble" which is what you should be doing it when you serve it hot in your favorite soup bowl :p
