Quinoa Pilaf
1 cup tricolor quinoa
2 cups chicken stock
1 tbsp. orange-flower water (optional; available in halal markets)
1 tbsp. butter, margarine or oil
½ cup golden raisins
½ cup dried cranberries
½ cup sliced green onion
¼ cup slivered almonds
1. Bring the stock, butter and orange-flower water to a boil.
2. Add quinoa; stir, then drop heat to low and simmer, covered, 15 minutes.
3. Stir in other ingredients; take off heat and let stand, covered, 5 minutes.
4. Fluff with a fork or spoon. Season to taste.
Makes about 6 or so servings.

It's a clear, sort of pale yellow liquid, that smells like oranges (of course ). It doesn't have much taste at all, being basically something you add to impart a bit of fragrance.
