We have a lot of macaroni noodles so it's high time I learn to make and perfect baked mac n cheese. This is my first try, using a really simple recipe found here: https://feastandfarm.com/baked-macaroni-cheese/
Of course, they only wanted salt and pepper for seasoning and I wasn't going to stand for that so I added garlic powder, onion powder, paprika, and my favorite ingredient that I add to all mac n cheese, NUTMEG!
That's right, nutmeg! Ever since I had mac and cheese at a bowling alley that had nutmeg in it, I just can't have it without it! You should definitely try nutmeg and mac if you haven't.
Thoughts: It's okay. Not anything amazing, but it was a simple recipe after all. The texture is kind of lumpy rather than creamy, and I'd much prefer a creamier mac n cheese than this. The seasonings were a good choice though. Next time I'll try a recipe that uses cream, maybe that'll give it the right texture. I have plenty of boxes of noodles to keep experimenting, at least! If anyone has any recommendations please share!

You don't need too much since nutmeg is kind of strong, maybe a teaspoon at most. I'd suggest going by taste and adding a little as you go until it tastes right, since I'm sure everyone has a different taste in how much nutmeg they can handle. Just don't like, dump a bunch of nutmeg in there because too much nutmeg can make you hallucinate and feel like you're gonna die from a really bad high. Consuming just 2 teaspoons worth of nutmeg can cause that.

One of my favourite dishes with pasta (noodles, macaroni etc) put the macaroni in boiling water, as one does, after half the cooking time add a carrot or two preferably cut up into nice rings or sticks. When they are cooked drain (keep a little of the pasta water and stir it back in with the butter) and pop in a bowl with a big blob of butter or margarine and stir through, sprinkle the lot with a tomato cup-o-soup or two packs if you have a lot of pasta, salt and pepper is optional. Its simple, filling, cheap and yummy.
Works with other instant cup-o-soups like a simple mushroom soup or chicken. You can also add tinned vegetables or tinned tuna. If you have tuna in oil then skip the butter and use some of the oil to create the sauce.

What works for a mac and cheese - and Ive seen this done by a lot of chefs - is that you don't use just -one- cheese. (Otherwise, you will only taste that cheese.)
Dont be afraid to use a blend, or add in cream cheese for a bit of tart, and certainly flavored breadcrumbs for texture.
