A delicious lunch, a fillet of catfish, and 2 slices of a pork tenderloin, cooked on skillet, in olive oil, seasoned in picture with cinnamon, turmeric, cayenne, pepper, garlic and onion powder, and ginger(pork) and same seasonings except for cinnamon on the catfish. Cooked at 300-350 degrees for 10 minutes or until cooked to preference. Can also season to your liking as well, and can be served with bread, fruit, veggies, or whatever side you want.
For the spices: use about a pinch each (1/8th of a teaspoon) and at least a tablespoon of olive oil to coat the skillet so that the fish / pork does not stick.
From Chris: I would treat the spices that thelion used as more of a rub, so seasoning the meat thoroughly and letting it 'marinate' in the spices for 4-6 hours in a Ziploc bag in your refrigerator before cooking will make a lot of difference.
Further - Im a bit surprised that thelion did not make use of the (Mandarin) oranges as shown in the picture - which would work quite well with the meats.
