A great new recipe from

Not hard, or too time consuming.
Good to warm you up, or if sick.
In a very large pot (2 gal or more), add the following
8 chicken thighs
8 cloves of minced garlic
1 large onion, chopped
1/2 lb sliced carrot
1/2 large pkg (1lb?) chopped celery (including tops)
1/2 lb mushrooms, sliced
2tsp coarse hand ground black pepper
salt (a lot), to taste
2tsp dried basil (did not have any fresh on hand, being winter here)
2tsp curry powder (adjust to taste)
2tsp dried cumin (adjust to taste)
2tbl teriyaki sauce
8+ cups of filtered water, or enough to cover everything.
Put all chopped vegetables and seasoning into pot
Rinse chicken off and place evenly into pot
Add seasonings, and cover with filtered water
(chlorine is bad for you, and for food taste)
Cover on medium high heat, until boiling, remove lid, adjust heat
Boil on medium to medium high heat for at least 30-45 min
Reduce heat to a low boil or high simmer
When carrots are soft, chicken should be done in another 30 min
Turn heat almost off while doing the next steps
Remove chicken to a plate
Let cool partially, to enable safe handling
With a small knife, cut all meat away from the bone
Discard any cartilage
Crack bones partially, and return to soup
Discard 85% of the skin, leave a few small pieces
Boil again for another 30 min
Remove any scum by skimming, but leave liquid fat
Adjust any spices +/- at this point
Remove bones, and any other foreign matter
Boil in a separate pot, 1/2 lb of wide egg noodles in filtered water
Overcook noodles for at least 15-18 minutes
(If you do not do this, all the soup broth will be absorbed by the noodles)
Add noodles to soup
Cover, and turn off heat. Wait at least 15 min before serving
You may refrigerate, and reheat. Soup, stews, goulashes, etc,
usually taste better if you wait till the next day to serve and eat.
Just reheat just below the boiling point.
OK, so maybe this is more like 3 hour soup,
but if I said that you front, you might not attempt this.
