BTW, a crumble infused with brown sugar instead of a dough crust top, lightly hinted with cinnamon and a touch of lemon zest would make it awesome.

Actually, I am a self made cook, and I have no idea what exactly a pieboard is, but i can guess.

See that little birdie head sticking out of my pie? That's a piebird! :D You stick it in the middle of the pie and put the crust top around it, and instead of the steam causing the crust to dome, having to cut vent holes, or making a lattice, the piebird vents the steam from the top. It should make a loud whistle sound, hence the name "piebird".
