This was SUCH a yummy dinner. =u=
If YOU wanna make it, you'll need this stuff!
-1 chicken breast
-Marinade (I used portugese) - from the bottle
-1 stem of broccoli
-1 capsicum (I used red)
-Corn (I used canned)
-1 cup of rice (I chose Jasmine)
-2 eggs
Cut your chicken breast into strips, and try to get them similar sizes so they'll cook at the same rate. Then place them in a container, and add your marinade, making sure to coat them well. I let mine sit in the fridge for three hours, but anywhere from 30 minutes to a day works! Do this before you start prepping everything else.
When your marinade is ready, then prepare the rice (boiling, microwave, absorption, you pick!) first, as you'll be needing it later. While its cooking, chop up your veggies! Cut the broccoli into bite-sized pieces, as well as the capsicum.
Once your rice is cooked, strain it or put it aside for later, and get your stir-fry going. Grease a pan/wok, and put it on a high heat. When its good and hot, chuck in the broccoli, capsicum, and corn. Stir-fry for about a minute, or until the vegetables are crispy. Then lightly whisk your egg, and add it to the pan/wok, breaking them up with a wooden spoon. Add your rice, and combine the ingredients until cooked through. Your stir-fry is now complete! Put on a low heat to preserve warmth, and get started on your chicken.
I used a barbecue, but a grill or pan would work too. Grease your surface, and place down your chicken, turning every twenty seconds or so (depending on how warm your surface is). Once the chicken is crispy and you're postive its cooked through, remove, and plate it. Add some of the rice salad to your plate, and you're done! Happy eating!
