Actually Food trucks have proven to be VERY lucrative during festivals. And depending on your specialty you can earn some incredible following.
Pros: Cheaper to insure
Able to find costumers vs waiting for them
Stock is fresher because it has to rotate more due to limited space

Cons: Road conditions are your enemy
Traffic accidents are now 100% more likely
Low storage so stock has to be rotated a lot
It's hard to get regular customers, unless you follow a specific route

Aside from that? This would prove a huge boon. Specially if they can get the main restaurant up and running. They can keep the food truck and offer catering
And THAT is a huuuuuuge thing. Specially if his food is amazing
