After all the crazy started last year, I wanted to do something at least once a week to ground us and end the week on a good note. I love omelettes and was gifted a Japanese pan to make my version of ‘tamagoyaki’ (rolled omelette). I like to just use milk, eggs, spices and inbetween each layer, cheeeese!
Sunday brunch with bacon, eggs and a mimosa, it’s turned into a tradition that gives us a bit of happiness no matter what the week brings us. <3
Theres not much to it, but I will try my best describe how I make these.

Second: Set stove to med heat and spray pan with cooking spray. Mix up 2 eggs, whip in about 2 to three TBS of milk (I like to sometimes use 1/2 & 1/2) with salt & pepper (I add dill and a dash of garlic powder, but only if I know anyone I'm making it for likes it too XD)
Then I pour a just enough egg mixture to coat the pan. Let that cook until its solid and sprinkle in any shredded cheese you prefer. Let it melt, the gingerly roll the egg into a burrito shape to one side.
Pour more egg mixture to coat pan, then add more shredded cheese and roll the egg the other way and continue the process until you use up all the mixture and voila! You are done! Top with more cheese or anything you wish, I'll sometimes cut up tomato and basil because we always have that laying around in our kitchen. ^_^
Note: This is most definitely not made with the "traditional" ingredients for tamagoyaki. It is just how I prefer to make it, since it uses ingredients I know we have in our kitchen.
