Just to be show-offy, I can tell you it's an old expression that means: "be happy with what you have and don't be greedy for more." IOW, if you've caught a bird in your hand, and you see two more in the bush, it's not a good idea to let go of the one to try to catch the other two, because what if you fail and they all fly off? Then you'll have no birds at all.
