I can't think of a better compliment to a picnic spread than some homemade egg salad! Preparing it yourself yields so much tastier results than buying it at the deli. It's a very quick and simple process. Just be sure to leave a few hours' time for it to hang out in the fridge; the flavors meld together as it sits and produces an even more delectable outcome. Serve with a crusty loaf of fresh bread for maximum picnic bliss!
Ingredients
8 eggs
1/2 cup mayonnaise
1 teaspoon dijon mustard
1/4 cup chopped green onions
2 tablespoons lemon juice
Salt and pepper, to taste
1/4 teaspoon paprika
Directions
Boil the eggs; when cool, peel and chop into bite-sized pieces. Place the chopped eggs in a bowl and add the ingredients one by one, stirring to incorporate. Stir slowly and gently to prevent mashing the eggs. Store in the refrigerator for up to 3 days.
