Something to wash those enchaladas down, from yelleena !

This is just a nice refreshing drink particularly in warm weather. I'm diabetic so I use diet lemonade in a glass that will hold 400 ml.


Strawberry Fizz

3 large strawberries per glass
1 tablespoon lemon juice
1 can diet or regular lemonade
ice

Put the lemon juice into the glass
Trim and slice strawberries
Top glass with lemonade
Add a few ice cubes and stir gently.

Notes:

As an alternative I sometimes use ginger beer instead and for a very special occasion this works really well with a sparkling white wine or champagne.

If desired you can also dip the lip of the glass in water then into plain or coloured sugar for that extra pretty presentation.
