I cooked the rice with orange and lemon juice as well as chicken stock, so it was pretty flavorful. the salmon was a honey/soysauce glace with crushed red pepper, I didn't think it would work, when i sampled the glaze but WOW it was tasty! the broccoli I added lots of minced fresh garlic, some onions, and thinly sliced carrots and sauteed them.

Spicy Salmon and Bok Choy
Ingredients
1 cup long-grain white rice
2 tablespoons honey
1 tablespoon soy sauce
1/4 teaspoon crushed red pepper
4 6-ounce skinless salmon fillets
1 pound baby bok choy
Directions
Cook the rice according to the package directions.
Meanwhile, combine the honey, soy sauce, and red pepper. On a foil-lined rimmed baking sheet, broil the salmon fillets until opaque throughout, 8 to 10 minutes, basting with the honey mixture during the last 3 minutes.
Steam baby bok choy (cut into quarters) until tender, 8 to 10 minutes. Serve with the salmon and rice.
Citrus Rice
Ingredients
1 cup reduced-sodium chicken broth
1/2 cup orange juice
2 teaspoons reduced-sodium soy sauce
1 1/2 cups Minute® Brown Rice, uncooked
1/4 cup green onions, sliced
4 tablespoons sliced almonds
Instructions
In a glass bowl, combine chicken broth, orange juice and soy sauce. Stir in Minute Rice; cover.
Microwave on high for 5 minutes. Let stand 5 minutes or until all liquid is absorbed.
Fluff the rice with a fork; gently mix/toss in the onions and almonds. Serve.
