Summer Salad

Serves 6-8

3 cups arugula, washed and chopped
3 cups curly endive, washed and chopped
3 cups romaine, washed and chopped
3 cups radicchio, washed and chopped
2 cups strawberries, sliced and cleaned
2 cups seedless grapes, cleaned and halved.

*If you cant get any of the arugula, endive, and radicchio fresh, get the salad mix in the bag
there's no shame in that whatsoever*

Toss together all the salad mix and garnish it with your strawberries and grapes, Pour some of
the walnut vinaigrette over the salad and enjoy.

Walnut Vinaigrette:

1/4 cup balsamic vinegar
1 teaspoon sugar
2 teaspoons minced fresh parsley leaves
2 tablespoons walnut pieces
1/2 teaspoon pepper
1/4 cup raspberries
1/2 teaspoon salt
1/2 cup canola oil
1/2 cup walnut oil

In a blender, add all your ingredients in and chop them all up, then add your oils SLOWLY until
its all combined.
