Galen just got home and from a week long dive trip and I wanted to make him a nice dinner. The plate turned out nicely. The steak was cooked perfectly and the potato pancakes were very tasty, though they were surprisingly hard to make. :-P
The steak was a sirloin that I marinated in teriyaki sauce for at least an hour. The I seasoned it with garlic powder, chile powder and a little ginger. I then tossed it on the grill, and I like to use a timer, the one on my phone, to cook it for about 3 minutes on each side, depending on rare or well done you want it. Using a timer helps cook it nice and evenly on each side. Overall, the steak is the easy part of the dish.
Potato Pancakes:
Mashed potatoes
1 egg
Flour
Milk
1/2 Cup (or more) Grated Parmesan Cheese
The potato pancakes can be a little tricky, and I'll tell you why in a moment. Start with mashed potatoes, however you would typically make mashed potatoes. I made these with leftover mashed potatoes. Whenever I make mashed potatoes, I make extra so I can make these at a later date. Crack an egg into them, add some flour and a little milk. You want to add enough flour so that they stay together when you cook and flip them, but not so much flour that they lose that potato-ee goodness.
The amount of each ingredient may vary depending on how much mashed potatoes you start with. (That's where these can be a little tricky) Stir in the cheese. Once the mixture resembles a thick pancake batter, then simply butter a frying pan and cook them the way you'd cook pancakes. They tend to be soft, but if they are simply not staying together when you flip them, add more flour to the mixture.
