Decided to add another dish to my resume' here...
From AllRecipes.com...with a few extra liberties of course :P
Ingredients:
12 oz. pork sausage [1 package turkey burger, thawed]
[1 big ol' cherise/chorizo link]
1 large zucchini
3 eggs beaten
1 cup shredded Colby cheese [shake cheese Parmesan]
2 cups cottage cheese [leftover ricotta]
1 1/2 cups shredded Italian cheese blend [three-cheese mix from Shaws]
1/2 cup chopped onion
[1 heaping teaspoon garlic]
[2 tablespoons Italian seasoning [thyme, oregano- I also had fresh basil]
1/2 cup chopped tomatoes [1 fresh tomato, chopped...same thing]
[1 jar spaghetti sauce]
[2-3 cubanelle peppers, seeded and chopped]
salt and pepper to taste
To make:
1.) Preheat oven to 350 degrees F and get a large baking dish- you can butter it or just spray on some PAM :3
2.) Saute' the onions, green pepper, garlic and salt and pepper until slightly browned, then toss in a bowl...then the chorizo (it doesnt take long to cook folks)...then the turkey burger- make sure you drain it when it cooks along, and break it up if it starts to clump on you :3
Once thats done, all of that goes in the same bowl with the peppers and onions- the tomato and basil I put in last, in order to maximize the basil's freshness...
3.) Scoop out the insides of the zucchini with a spoon or melon baller-
some folks like to cook this in as well, and then blend with the meat- didnt do that, but I did save a few seeds for the garden :3
4.) Once the zucchini is scooped out, nuke them on high for 5 minutes- I'd say this step is essential, since nuking will suck most of the water out from the zucchini :3
4 1/2.) Meanwhile, in a separate bowl, combine the 3 eggs, ricotta (or cottage cheese....sorry folks, I like being fat :P) Colby (three cheese blend)
onion, Italian seasoning and salt and pepper (Since I already did the onions you can skip this step)
5.) Cover the pan with spaghetti sauce, then place the zucchini right on top. With the zucchini already sliced in half and scooped out, layer the zucchini with the meat then the cheese mixture. If theres any sauce left over, carefully bathe the zucchinis in with the sauce :3
6.) Bake in the oven for 40 minutes- BUT- when it gets to the 5 minute mark- you can always shake on a layer of Parmesan, get a nice cheesy crust on top :3
Then when its done *nom nom nom*
