fresh healthy salad ^_^
Loosely followed from this recipe: (I used a spring mix lettuce, added marinated veggies, omitted the cottage cheese).
Greek Salad
1/2 small head romaine lettuce
1 Tbs rinsed and crumbled feta cheese
2 cups trimmed spinach leaves
2 Tbs peeled seeded and chopped cucumber
2 medium-size pitted ripe olives, chopped fine
3 Tbs dry-curd low-fat cottage cheese or farmer cheese
1 tsp olive oil
1 tsp lemon juice
1 clove garlic, minced
2 Tbs minced fresh mint or 1 1/2 teaspoon mint flakes
1/8 tsp black pepper
1. Wash the romaine and spinach leaves, pat them dry with paper towels, and tear into bite-size pieces. Place in a large bowl with the cucumber, cottage cheese, mint, and feta cheese; set aside while preparing the dressing.
2. In a small bowl, mix the olives, olive oil, lemon juice, garlic, and pepper; whisk together until well blended. Pour the dressing over the salad, toss well, and serve. Serves 4.

Lemon Pepper Chicken
1 Tbs butter
4 chicken breasts
lemon-pepper seasoning
1. Melt butter in a large skillet. Add chicken breasts. Once the breasts are just cooked, cover with the seasoning.
2. Cook for about 20 minutes or until chicken reaches 160°F. when thermometer is inserted at thickest part and juices run clear when cut.
