Hello all with the servers really digging the coke treats I made yesterday and another easy meal today I pulled three small squares of puff from the freezer to make todays Mocklava
I found we had a opened bag of whole almonds tossed them into the robo coupe for a good grind on, amd tried to decide on the flavor, I went out to my van for a can of Major Melon zero sugar mt dew and reduced that over heat with some powdered sugar.
I cute the pastry into small squares this time mixed the syrup into nuts till I had a good sticky mass and packed the puff with my nutty goop. I then folded them over crimping the edges leaving a pocket of nut in the pasty drizzled with some of the left over syrup and baked them off.
These ones puffed up much better getting that nice crispy texture but my pouches didn't hold and as they puffed they all leaked but thats all good. I pulled them out and before serving drizzled them once more with mountain dew syrup because Baklava is suposed to be sticky damn it. again a huge hit with the servers... though since it was a sunday staffing was down so the range of taste testers were low and I got to bring home a few for the fox to taste... he hasn't yet
all in all the only thing i can say for one hundred percent is I have come up with a fool proof way of rendering soda into a syrup thats super quick. so i may just start in on my soda fudges again sometime soon
