
Been a while since I posted something like this, but I was very happy with how this turned out. It started out as just a potato soup, but I kept adding things to it as usual. So it has potato, parsnips, carrots, leeks, mushrooms, garlic, red and yellow onions, sweet corn and some bacon, because bacon. Then topped with cheese, sour cream, green onions and more bacon.

I kept meaning to type this up before, but kept forgetting to do it. ^^; Though assuming I'm remembering it right the ingredients were:
potato
leeks
parsnips
carrots
mushrooms
corn
onion
garlic
bacon
chicken broth
milk
peprika
chili powder
cayanne
red pepper flakes
salt
pepper
more bacon for the top
cheese
green onions
sour cream
I'm horrible in that I don't really follow a recipe for most things that I do and just kind of throw them together. Especially depending on how much I need. But I cut everything up ahead of time and make it all about the same size. Cook the mushrooms off until they are brown and put them in a bowl on the side. Cook the onions until they're browning and then add the garlic and spices. Mix in some flour for a roux and then keep slowly adding milk and mixing it up. Mostly to try and prevent lumps and so you don't have to keep waiting for it to warm up. I usually end up doing about half milk and half chicken broth. I know a lot of recipes either say to use heavy cream or something, but milk tends to work just as well for me. Once that starts to boil turn it down to a simmer and add everything in, but the cheese, green onions, sour cream and leeks. The leek cooks quick so I just stir it in at the end and wait a few minutes. And then add salt and pepper as you see fit. I like doing soups like this, because typically it's pretty easy to just cut everything up and then throw it together.
