It’s been raining for days here, and my poor lettuce is not having it. Harvesting as much as possible. I’ve got 5 different types of lettuce here (plus some other yummies harvested from the garden too beet greens, and Bear Necessities Kale, so if you got ideas for those too, great!)
I’m giving it away and splitting it with family too, but we’l be having a big lettuce bowl every night this week for sure!

Chicken Caesar Salad
2 small crusty sourdough bread rolls, torn into bite-sized pieces
Olive oil spray
1-2 cooked and shredded chicken breast
4 bacon rashers, rind removed, coarsely chopped
1 cos lettuce, leaves separated (or use mixed greeen leaves)
60g parmesan, finely grated or shaved
Dressing
1 egg
2 garlic cloves, crushed
3 drained anchovy fillets
2 tablespoons fresh lemon juice
60ml (1/4 cup) olive oil
60ml (1/4 cup) grapeseed oil
cook the chicken and shred or chop it into cubes
tear the bread up and fry in a little olive oil to make croutons
coarsely chop bacon and cook, drain well
combine lettuce leaves with parmesan, chicken, bacon and croutons
blend up the dressing and dress the salad when ready to serve
For some extra fun and colour add in nasturtium leaves and flowers it gives the salad a peppery zing
Fry some of the kale into kale chips sprinkle with mixed salts and lemon juice
You can also add in any fresh herbs. I like mine with a dash of fresh mint and parsley

You can actually add cut apple, celery slices and walnuts to turn it into a Waldorf salad.

I love sushi rice seasoning sprinkled on buttered bread. All that tasty seaweed, sesame seed and spices are yum, yum, yum.
Can't wait to see how your celery goes because my dad used to grow celery every season. Hint:if you want to keep the stalks a lighter shade of green - wrap the lower part of the plant in newspaper in the last few weeks of growth. Basically keep the upper leaves exposed but keep an eye on snails and slugs getting under the paper.
If you don't like picking the snails and slugs off or using snail bait try making yourself a beer snail trap.

Whew, tough to beat Yellena there, but...certainly you could also do a "breakfast salad"; that is:
1 ripe avocado, cut into chunks
2 tablespoons olive oil
1 - 2 tablespoons white vinegar
salt and pepper to taste
Blend all of these as your "hollandaise", then use your fresh lettuce as your base, top with soft poached eggs, crumbled BACON and potato sticks :3

This salad has lots of spinach, lots of fresh, sliced strawberries, and a delicious, sweetened oil and vinegar dressing spiked with poppy and sesame seeds."
Ingredients:
2 bunches spinach, rinsed and torn into bite-size pieces
4 cups sliced strawberries
1/2 cup vegetable oil (or 1/4 C EV Olive Oil + 1/4C Veg Oil)
1/4 cup white wine vinegar (prefer balsamic)
1/3-1/2 cup white sugar
1/4 teaspoon paprika
1 teaspoon mustard powder
1 teaspoon (approx) garlic powder
2 tablespoons sesame seeds
1 tablespoon poppy seeds
Directions:
1. In a large bowl, toss together the spinach and strawberries.
2. In a medium bowl, whisk together the oil, vinegar, sugar, paprika, spices, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.
Options
- Add pecans (or candied pecans)
- Add blue cheese
- Add mandarin orange slices
- Add blueberries
- Add Jicama "match sticks"
- Add thin sliced red onions
- Substitute Raspberry Balsamic vinegar for the white vinegar
- Add a dash of cayenne pepper
- Substitute "baby" spinach for the torn "regular" spinach
