It's called Hot Shoeing! (or hot setting)
After the Hoof has been trimmed, rasped and is ready for the new shoe, you heat the shoe in the forge and place it briefly on the foot to sear the path where the shoe will sit when its finished.
It creates a smooth contact surface between the hoof and the shoe and basically seals the hoof which is usually porous, so it's less likely to dry out, or absorb moisture and soften over time. The Burning heat also tends to kill any fungi and bacteria that could lead to issues in hoof health.
It isn't the only way to shoe a horse, but if it's done right my understanding is it's the safest!
