Unlike the Marvel ones, though, I don't think Dante was in any of those games. More in general, unfortunately, they all tended to be "Street Fighter vs. King of Fighters" than truly "Capcom vs. SNK". I long thought there were many missed opportunities. For one, I always thought it'd be hilarious if the "League Bowl(ing)" guy got to be in a 2D fighter.

Well, then, Vawkis! I'm answering as soon as I saw this, despite the hour where I am, because of that last bit you added XD The answer is "both" because SNK is the company and King of Fighters was just one of their properties, even if it was their biggest one for years.
KoF started as a crossover itself, between the Fatal Fury series and the The Art of Fighting series.
My disappointment at the cast of Capcom vs. SNK, especially the first one, was that the Capcom side didn't include a larger one from outside of Street Fighter and that SNK didn't include a larger one outside of KoF. I'm no marketeer, and I realize the RL "SF vs. KoF" approach was the low-risk/high-entropy way for them to go, but again, I thought the crossovers could have been handled more interestingly and had more of their own identity from the beginning.
Focusing back on Mai herself: before KoF existed as its own game series (and before she was part of it, starting in '94 in the first installment), she was a character in the Fatal Fury series, starting in (the vanilla version of) 2. On a naughtier tangent, I'll share these here 'cause SA knows me and is cool about links in general ^_^ Both NSFW:
