Snakefolk are quite familiar with having a singular limb in place of a pair of legs and they even press themselves against the ground and propel themselves with their arms when "running" in a similar way as how merfolk "walk" so becoming a merperson didn't really bother Cas too much, yes, the fact that she couldn't coil her tail into a standing position or slither around proved to be troublesome, but she adjusted rather quickly and seems to have no strong desire to change back.
