so, a rather simple looking dish. A favorite in Kentucky but I know i'll have blasphemed it honestly. There's three points I can think for that.
1. Two out of three eating this last night dislike tomatoes in dishes like this.
2. I couldn't find a straight answer on what type of bread to use
3. I had no white cheddar, so regular sharp cheddar had to do
other than that i tried to follow it as best i could.
Starting point, cooked bacon. Fairly simple, you kinda wanna do this a little ahead of time, and I did so with thick cut about an hour before everything else.
Now...
The Base Ingredients
Bread (i used a slightly thick sourdough which i pan toasted with butter on both sides)
Turkey (I got some thick cut turkey from the deli, oil brown variety.)
Béchamel sauce (roux plus milk. I added salt, pepper, cheddar, parmesan, and some basic hot sauce)
Cheese (more cheddar and parmesan)
sliced tomato (not used here)
The Béchamel sauce is honestly the most time consuming part. Add equal parts butter and flour, I'd recommend 2tbsp each per 3 people served, to a pot or pan and whick thoroughly. Add milk, a bit at a time until you have a slightly thick consistency. Mix in salt, pepper, your cheeses, and hot sauce, take off the heat. This can sit while you prep the rest.
take your toasted bread and lay it flat. Add your desired amount of turkey. If you're going traditional this is where you add the tomato slices. Spoon the sauce over the top of the pile, then add some parmesan and cheddar on top. Broil on high until golden browned. Add bacon on top. and then serve.
Where I'd wanna improve it next time: The turkey was still kinda cold, and this feels like a dish that should be hot throughout. So in the future I might throw it in the pan.
