I made this in November of 2018 before moving to my current home, and thankfully got a good pic of it--a Japanese summertime staple made a season late, hiyashi chuka (chilled ramen with sauce and toppings, its Japanese name literally translating to "chilled Chinese")! It was only my first time making it and I surprised myself by getting it right immediately--I don't mean to brag, but I felt it tasted like it could've come from a restaurant! But hey, you be the judge--follow this recipe and see if you're just as satisfied!
Noodles:
- 1 packet of dry ramen
Sauce ingredients:
- 1 cup of soy sauce
- 1/4 cup of water
- 1/2 cup of rice vinegar
- 1 tbsp of sugar
- 2 tsp of ground ginger
Optional sauce ingredients:
- 1/2 tsp of sesame seeds
Fried egg ingredients:
- 3 large eggs
- 1 tbsp of butter
- 1 pinch of salt
Toppings:
- Fried egg
- 1 packet of sliced sandwich chicken
- 1 packet of sliced ham
- 1 can of sweet corn
- 1 packet of crabmeat
- 1 can of tuna
- 1 sweet onion
- 1 hot house tomato
Other possible toppings include carrot and cucumber sticks, chopped green onion, shredded daikon, konnyaku, cold tofu, napa, boiled egg, bean sprouts, edamame, bonito flakes, kamaboko, perhaps some grilled salmon, chili peppers if you feel adventurous, pretty much anything you can imagine would go well together and with the noodles! Whatever your budget and the local grocery selections allow, go for it!
Recipe:
Preparing the egg
1. Coat a frying pan with cooking spray or melt a spoonful of butter or margarine in it over medium heat.
2. Break the eggs into the pan and use a whisk to mix them until solid yellow.
3. Cook until mostly solid, then carefully use a spatula to fold the egg over, or try rolling it into a proper tamagomaki if you have the skill and/or appropriate pan to do so.
4. Take the pan off the heat and set the egg aside somewhere safe, keeping it covered.
Preparing the ramen
1. Boil the noodles in a pot of water until soft.
2. Empty the pot into a strainer.
3. Keeping the noodles in the strainer, run cold water over them thoroughly until they're cool. Keep them in the strainer and make sure they stay wet. I'd advise running more water over them every few minutes.
Preparing the sauce
1. Pour 1 cup of soy sauce into a small bowl.
2. Add the remaining ingredients and mix well with a small spoon or whisk, then set aside. If you want to add extra chill to your dish, make the sauce first and keep it in the fridge while you prepare the noodles and egg.
Putting it all together
The following steps will assume you're using the toppings pictured.
1. Slice the egg into strips.
2. Roll up individual pieces of ham and chicken and slice them similarly to how you sliced the egg.
3. Break or cut the crabmeat into smaller pieces.
4. Peel the onion, cut it half, cut a slice from the middle about 1cm thick, and cut that slice into small pieces.
5. Wash the tomato and cut half of it into thin wedges.
6. Put the noodles into a bowl and arrange the toppings on it, using a spoon or fork to add as much tuna and corn as desired.
7. Once ready to eat, pour the sauce over the dish and immediately mix together.
