I don't understand too much Tauren legend and lore, but what I picked up on kept making me scratch my head "This is the EVIL faction in the game?" all nature-oriented, seemed to be a lot less rapacious of Azeroth than the Dwarven race or Goblins...
I am unsure, but maybe there's something about how much nurture humans draw from bovines in dairy and meat products that gives us an almost genetic affinity for the bovine... I know I wanted to play Taurens from WoW's first beta (and did), as well as another bovine/minotaur fur I knew.
I was more ursine in those days, so elected to play druids for the bear form.

Lore wise the Tauren are not an evil race, just as the Horde is not an evil faction, but neither is it a good one. Both are shades of grey. The Tauren are peaceful by nature but god help you if you provoke them. They serve the Horde loyally because they have a strong sense of honour and wish to help the Orcs.
