Let me put it this way.. The first four seasons were decent. The 5th felt rather rushed. And seasons 6 through 8 are beyond what is in the books - and due to lack of writing talent they are getting progressively worse.
Meaning so long as you stick to seasons 1 through 5 you should be good. Or just grab the books. Those are still better than the series (even though the author doesn't seem to be working on the last one anymore in the wake of the Season 8 disaster.
